Erik's Favorite Lasagna Recipe

Preheat oven to 375º

½ lb. ground beef [or turkey]
¾ cup water
1—32 oz. jar spaghetti type sauce
½ tsp salt
1—8 oz pkg. lasagna noodles, uncooked
1 cup ricotta cheese *
12 oz mozzarella cheese grated
¼ cup parmesan cheese
[This for 7x11 pan.]

Brown ground meat and drain.
Add water, salt, sauce and boil.
In pan, layer sauce [hot], noodles, ricotta, and grated cheese. End with sauce.
Cover tightly and bake ~ 1 hour
Let stand ~ 10 min. and put parmesan cheese on top.

*[Instead of simply ricotta:]
2 eggs, beaten
16 oz ricotta [if 9x13 pan]

Classic Vanilla Bean Ice Cream Recipe

As summer approaches, I start to see more shopping ads that include recipes for favorite summer treats. Here’s a good one from Williams-Sonoma.

The best vanilla ice cream is made with vanilla beans that have been steeped in custard to release their maximum flavor. If vanilla beans are unavailable, simply omit the steeping and add 2 tsp. vanilla extract to the chilled custard before freezing.
